Gluten-Free
This diet restriction requires the elimination of all types of wheat flour and any other product which has traces of wheat, barley or rye. All of these products contain the protein gluten. Some oats may be processed in factories where flour is processed, so may contain gluten unless labelled otherwise. Also because many factories which use wheat flour also produce other products, contamination can occur.
There are two main gluten-free labels one explicitly says "GF" and the other references an association for Celiac diseases. If someone chooses to follow a gluten-free diet, more than likely they have some severe reaction to gluten-free so no risks should be taken. Just a little flour can cause lasting problems. Also if someone who has chosen a gluten-free diet re-introduces flour wheat flour back into their system, they may also face digestion issues. Some individuals may be willing to try kamut/spelt because their gluten may be lower, however they should still be made aware of the presence of these forms of wheat as they may still cause issues.
Even if in the past wheat flour has not bothered you, a gluten intolerance can be developed. Even if your parents and grandparents used plenty "normal" flour without issues, we need to consider that what has changed over the years and may be heavily sprayed and genetically modified. Gluten can make any auto-immune disorders worse and it can lead to many other issues.
In the Caribbean, many of the staples/carbohydrates in our natural environment can create substitutes for wheat flour suitable for a gluten-free diet. For example - cassava, green banana, sourgum, sweet potatoe and amaranth. Rice, corn or potatoe are also affordable substitutes in products which are typically made from flour for e.g. pasta,breads,tortilla wraps.
A personal lifestyle choice to eliminate gluten, may also require the elimination of certain beauty and personal care products.
